Better-Than-Takeout Orange Chicken

Trust me, I totally understand how tempting take-out can be on a weeknight when you just don’t feel like cooking, but you might be surprised how simple it can be to prepare your very own version at home. This easy Orange Chicken is exceptionally flavorful but boasts a lot less sodium and far fewer calories than its restaurant counterpart. I like to serve this dish over cooked rice or quinoa with a side of my delicious Chili-Garlic Broccoli (page 182).

- Grated zest and juice of 1 large navel orange
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 2 tablespoons cornstarch
- 1 garlic clove, minced
- ½ teaspoon grated fresh ginger
- 1 tablespoon vegetable oil
- 2 boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 red bell pepper, thinly sliced
- 2 cups snap peas, strings removed
- 2 green onions, thinly sliced
- 1 teaspoon sesame seeds
- In a small bowl, whisk together the orange zest, orange juice, soy sauce, honey, cornstarch, garlic, and ginger until well combined.
- In a large wok or nonstick skillet, heat the vegetable oil over medium-high heat. Add the chicken and cook, stirring often, until it is golden on the outside and no longer pink inside, 6 to 8 minutes. Add the bell pepper and cook, stirring, for 2 minutes. Add the orange sauce and snap peas and cook, stirring, until the sauce has thickened and the peas are tender-crisp, 3 to 4 minutes.
- Garnish with the green onions and sesame seeds.
- Serve immediately or store in the refrigerator for up to 3 days.
- Simple Swaps - You can easily replace the chicken in this recipe with 8 ounces extra-firm tofu, cut into ¾-inch cubes. Simply toss the tofu in 2 tablespoons cornstarch before adding it to the pan to get a nice, crisp exterior. Cook the tofu in the vegetable oil, stirring often, until it becomes golden, about 6 minutes.
