Cocktail
Spiced Apple Cordial
- ½ cinnamon stick
- 1 tbsp allspice (whole berries, then cracked)
- 2 cups plus 2 tbsp apple juice (not from concentrate)
- 1 cup sugar
Cocktail
- 2 oz white rye
- ¾ oz spiced apple cordial
- 4 dashes Angostura Bitters
- Handful of ice cubes
- Fresh thyme sprig, for garnish
Spiced Apple Cordial
- Break the cinnamon sticks into a few pieces and combine with the cracked allspice. In a saucepan over medium heat, add the spices and dry toast them for five minutes, constantly moving the pan. Add the apple juice and simmer over high heat for 5 to 10 minutes, until the apple juice is reduced by half. Once cooled, strain through a fine strainer, and again through a coffee filter. Return the apple juice to the saucepan and add the sugar. Over medium heat, simmer the juice until the sugar dissolves, roughly 10 minutes. Cool and store in a sealed container. The juice can be refrigerated for up to three weeks.
Cocktail
- In a mixing glass, stir in all of the ingredients except the ice. Strain into a rocks glass over ice, and garnish with a sprig of time.
