Sweetheart Oven Fries

These sweet little fries will be the star of your Valentine’s breakfast, lunch, or dinner! Serve them as hash browns to complement your eggs, as a side for your dinner, or just on their own as an adorable little snack. We love serving these fries with West Coast Eggs Benny (page 69), Breakfast Bruschetta (page 74), or Tofu Veggie Scramble (page 73). You will need a small heart-shaped cookie cutter to pull this one off.

  1. Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper.
  2. Bring a large pot of salted water to a boil. Peel the potatoes (or just wash them—depends how you want to use the leftover potatoes after you cut them with the cookie cutter) and boil them for 15 minutes. Drain in a colander and let cool slightly.
  3. Once cool enough to touch, cut the potatoes crosswise into ½-inch (1 cm) slices. Using a small heart-shaped cookie cutter, cut out as many hearts from each slice as you can.
  4. Place the heart-shaped potatoes on the prepared baking sheet and toss with the olive oil, rosemary, and salt. Arrange in a single layer and bake until golden brown, about 30 minutes, carefully turning the potatoes with a metal spatula once halfway through the baking. Serve hot out of the oven on their own or with your favourite ketchup or dip.
